These sexy eggs always put a little pep in Uncle Ed's step!

INGREDIENTS:
2-3 scrambled eggs per person
1 tablespoon of butter
2 oz Feta
1 tbsp Scallions (green onion)
Salt & Pepper
DIRECTIONS:
Heat a nonstick pan on medium- low heat. Add the butter and melt. Meanwhile scramble the eggs up. Add the eggs into the pan and cook the eggs "low and slow" mixing them often. This should take anywhere from 5-10 minutes depending on your stove but the result should be very creamy, not rubbery at ALL. Once cooked, put the eggs on a plate and top with feta and chopped scallions, salt and pepper.
