This caprese salad is so good, even lactose intolerant Aunt Carol goes back for seconds!
INGREDIENTS:
Arugula/rocket
Tomato
Basil
Balsamic glaze
Olive oil
Salt & Pepper
DIRECTIONS:
Place the arugula on a small plate if it will be a starter or side, and a large plate if it is to be a main dish. Slice the mozzarella and tomatoes and cut the basil into ribbons. Place the tomatoes and mozzarella on top of the arugula and garnish with the basil. Drizzle the balsamic glaze, olive oil and salt and pepper on top.
