This peachy delight always gets crazy Aunt Paula to dance on the table!
Prep time: 10 mins
Cook time: 5 mins
INGREDIENTS:
Arugula
1 Peach
4 slices Proscuitto
Fresh Mozzarella
Walnuts or Pecans
Balsamic Glaze or dressing
Canola Oil
DIRECTIONS:
Heat grill or griddle too high. Cut the peach in half and remove seed. Brush the peach halves with the oil and grill for about 5 minutes until nice and charred. While the peaches are grilling, Assemble the arugula, cheese, nuts and prosciutto in a dish or on a plate. Once peaches are done, slice or cut into chunks and add to the salad. Top with either balsamic glaze or dressing. (Also delicious with just lemon and olive oil as the dressing!)
