Scotty that hit the home run at the company picnic sure digs this salmon!

INGREDIENTS:
2 salmon filets
1/2 cup pistachios
Panko bread crumbs
Juice of 1 lemon
Paprika
Cayenne
Salt & pepper
Olive oil
DIRECTIONS:
Preheat the oven to 425 degrees. Place salmon in a baking dish and season with salt and pepper. Crush the pistachios with a mallet or you can use a coffee cup, hammer, whatever you have. Mix the crushed pistachios with about 1/4 cup of panko bread crumbs and juice of one lemon and about a tablespoon of olive oil. Add sprinkle of paprika and cayenne and mix the crust all together. Top the salmon with the crust mixture. Bake for 12-15 minutes.
