This turkey chili is so good it will make you wanna slap your ex boyfriend!
Prep time: 10 mins.
Cook time: 20 mins.
Ingredients:
1 lb ground turkey (93% fat free)
1 yellow onion
1 red, yellow or orange pepper
1 can diced green chiles
2 quarts chicken stock
2 cans cannellini beans
1 tsp cumin
2 bay leaves
2 tbsp chili powder (add more if you like more)
Italian seasoning
Salt & Pepper
Olive oil
Optional Toppings:
Sour cream
Shredded cheese
Jalapenos
Cilantro
Tortilla Chips
Directions:
Cook onions and red pepper in a big pot in olive oil until onion is translucent. Add the ground turkey and cook until done (no more pink showing). Then add 1 can of beans, green chiles , and all the seasonings and bay leaves. Blend one can of beans in a blender with the chicken stock. Add the puree to the chili. Let simmer for about 10-15 mins. Pour into a bowl and top with your favorite toppings!
