Prep time: 5 mins
Cook time: 20 mins
INGREDIENTS:
1 bunch Asparagus
1 pint cherry tomatoes
Mozzarella or fontina cheese
Balsamic glaze
Fresh basil
Olive oil
Salt & Pepper
DIRECTIONS:
Preheat your oven to 350 degrees. Meanwhile, get a baking sheet out and trim the asparagus ends about 1-2 inches. Discard the ends and line the asparagus up on the baking sheet. Toss with olive oil, salt and pepper to taste. Place in the oven for 10 mins. Take the baking sheet out and top the asparagus with the cheese and tomatoes. Bake for another 10 mins. Once done, top with balsamic glaze and fresh basil.
