INGREDIENTS:
1 box uncooked ziti pasta
4 ounces pancetta or bacon, diced
1 large onion, chopped
3 garlic cloves, minced
1 lb ground Italian sausage
1 cup red wine (Cabernet is great)
1 28 oz can crushed tomatoes
1/2 cup fresh basil leaves
1/2 teaspoon kosher salt
1/2 teaspoon sugar
1/2 teaspoon red pepper flakes
2 cups ricotta cheese
1 cup shredded mozzarella
1 package fresh mozzarella cheese
Cooking spray
1/2 cup grated parmesan cheese
DIRECTIONS:
Preheat oven to 350 degrees. Cook the pasta in a pot according to box directions.
Meanwhile, cook the pancetta in a large skillet over medium- high heat. Add onion & garlic and sauté until onion is tender. Add sausage and sauté until meat is no longer pink. Add wine and cook for 3 mins. Then add the tomatoes, salt, sugar, pepper flakes and basil. Reduce heat to low and cook for 3 minutes, stirring occasionally.
Stire ricotta and 1 cup shredded mozzarella into the hot cooked pasta. Grease a 13 x 9 baking dish and top with sauce mixture. Add the pasta and top with more sauce mixture. Top with fresh mozzarella and parmesan cheeses.
Bake at 350 for 25-30 mins. Garnish with fresh basil and more red pepper flakes.
